Characteristics

The chorizo protected by the Protected Geographical Indication “Chorizo Riojano” is characterized by its horseshoe shape with a 30-40 mm. diameter and a minimum weight of 200 grams. Firm, compact consistency, generally bumpy appearance, smooth cutting, well bound and with a clear differentiation between meat and fat, define our product.

Aroma

Balanced, intense aroma, persistent, with dominance of paprika, in addition to notes of garlic; absence of rancid, pungent odors.

Texture

Balanced texture in the mouth, easy to chew with appreciable high juiciness. Generally bumpy appearance, smooth cutting and well bound, without abnormal colorations and with a clear differentiation between fragments of meat and bacon.
