During the month of December we went to the School of Hospitality and Tourism of La Rioja in Santo Domingo de la Calzada to learn first-hand about the great work that the Rioja teachers do with the future chefs of our community.
In addition, we invite cooking students to participate in the first Pintxos Contest of the IGP Chorizo Riojano. The challenge was “simple”: get the most out of the chorizo and be creative in both the form, the flavor and the presentation.
These were the finalist skewers:
- Riojan Waffle Chorizo
- Tartar on brioche bread
- Guernica pepper stuffed with chorizo
- Potatoes with chorizo
- lollipop Ravioli stuffed with chorizo
- Chorizo tapa with Gernika pepper hummus
A jury made up of two teachers from the EHOJA and a member of the IGP Chorizo Riojano were in charge of tasting all the finalist pinchos that were presented and explained by each of the students.
