El Chorizo Riojano elaborado bajo la Indicación Geográfica Protegida (IGP) es uno de los productos más representativos de la industria cárnica de La Rioja, debido entre otras cosas, a que es un producto de gran tradición y que, a pesar de presentar una cierta heterogeneidad debido a su elaboración artesana, presenta un perfil sensorial único y está totalmente diferenciado, tanto en composición como sensorialmente, del resto de chorizos que se producen en España.
Y para comprobarlo hemos lanzado un reto, “el challenge chorizo riojano IGP” donde varias personas elegidas al azar han probado a ciegas (con los ojos vendados) el chorizo riojano IGP frente a otro chorizo de otra marca de calidad.
Hemos captado la opinión del consumidor, y ¿qué ha pasado?
Que el Chorizo Riojano IGP ha sido el ganador del reto porque el 100% de los consumidores lo ha preferido
¿Por qué? porque tiene un olor suave y apetecible, un sabor agradable y equilibrado, es muy fácil de masticar, y en la boca es muy jugoso y suculento, unas cualidades sensoriales muy diferenciadas, ya que la Indicación Geográfica Protegida (IGP) Chorizo Riojano elabora el producto según estrictos controles de calidad, que le confiere ese sabor tan vinculado a la tierra, al buen hacer tradicional y a los sabores del origen.
